Tea for You
The Perfect Pot


There's nothing like a cup of hot tea to turn up your body's thermostat.  In the interest of encouraging more of our customers to adopt this highly energy-efficient way to deal with the season's chill, we include the following brewing tips culled from tea fanciers' Internet web pages.  Put on the kettle and pull out the tea pot, for a noticeably more flavorful cup.
 

Four tips for a better pot of tea:

Use the best quality leaf tea you can find, usually available at a gourmet coffee shop or specialty grocery store.  The mass market teas found in most supermarkets contain higher quantities of tea plant stems, plus tea "dust" to add fast color without wonderful flavor.

Pour a bit of boiling water into a teapot before beginning a brew, to warm the ceramic and make sure the actual water for your tea doesn't quickly plummet below ideal brewing temperature.

Use one teabag (or an equivalent amount in a tea strainer) for every 6-oz cup in the pot.  Add the water, fresh from a rolling boil.

Steep the tea for three to five minutes without stirring, more or less to suit your choice of strength.  Take out the tea, and don't squeeze the bags . . . squeezing can press out some of the bitter tasting polyphenols that remain in the leaf.

Now pour, and enjoy a cup of interior comfort.  One lump, or two?
